Mom's Chicken Potato Curry

INGREDIENTS

2 large potatoes, peeled & chopped into small/med sized cubes

1.5 lbs chicken breast, chopped into small/med sized cubes

1 large onion, chopped

4 garlic cloves, chopped

3 tbsp of olive oil

1 tsp paprika

1 tsp black pepper

2 tbsp of curry powder and mix

1 16 oz. can of tomato sauce

48 oz (3 16 oz cans worth) of boiling water


INSTRUCTIONS

Add 3 tbsp of olive oil on medium heat in BIG pot and brown garlic and onions

Once brown, add 1 tsp of paprika, 1 tsp, of black pepper, 1 tbsp of curry powder and mix.

Then mix in chicken, cover pot and wait 5 minutes

Then mix in potatoes, cover pot and wait 5 minutes

After 5 min, add 1 can of tomato sauce - 16 oz then fill empty can 3x with boiling water and pour into pot, mix, cover and wait to boil.

Then add 1 whole lemon - just juice, cover and wait 20 minutes

Check after 20 minutes, if still watery, take out 10-15 potatoes, mash them up, and put back in the stew, mix and turn off and wait until thickens.

Serve over rice and plain yogurt!


 
 

So my mom used to make this dish when we were kids. We’re Assyrian, so it’s a yellow curry with a middle eastern twist to it. It’s one of my favorite dishes she used to make for us.

A few years ago, I started to make some home made dishes at home, I called my mom and I was like “I need you to tell me exactly how to make this dish” and so I wrote it down, I typed it out actually, and it has a lot of curry stains on it but I always refer to it when I make it. I just wanted to make sure I got all the details down.
